Ingredients

  • THE BASE
  • 8 ounces white onion, diced
  • 1 bunch kale, finely chopped
  • 2 cans Great Northern beans
  • 1 can cannellini beans
  • 1 can navy beans
  • 6 tablespoons minced garlic in oil
  • 1 tablespoon tallow, lard, or fat alternative of choice
  • 2 teaspoons salt
  • 3 tablespoons cumin
  • 1 tablespoon oregano
  • 1 teaspoon black pepper
  • 1 bottle vino verde (750 ml - Portugal)
  • 2 medium bay leaves
  • DEVELOP RICHNESS
  • 1/2 teaspoon sugar
  • 1 teaspoon white wine vinegar
  • 2 tablespoons butter
  • 1 teaspoon chicken bouillon
  • 1/2 teaspoon Worcestershire sauce
  • 3 - drops liquid smoke
  • 2 teaspoons ground coriander
  • 2 pinches cayenne pepper (to taste)
  • ADDING COMPLEXITY
  • 2 cups heavy cream
  • 1 teaspoon lemon juice
  • grated Parmesan (optional)

How To Make aunt squishy’s winter white chili

  • Step 1
    Prep: Dice the onion, chop the kale, and drain and rinse the beans until bubbles stop forming on top.
  • Step 2
    Combine all of the base ingredients in a slow cooker or Crock Pot and cook on low for 4 hours.
  • Step 3
    Add sugar and vinegar, and let cook approximately 10 minutes before adding the butter and stirring until melted.
  • Step 4
    Add bouillon, Worcestershire, liquid smoke, coriander, and cayenne pepper. Stir well and turn off the heat.
  • Step 5
    Allow to cool until the temperature reaches approximately 150-160 degrees Fahrenheit to prevent curdling. (Approximately 10 minutes, depending on your slow cooker.)
  • Step 6
    Pour heavy cream into a medium bowl, and slowly add 1 cup of liquid from the Crock Pot while whisking continuously to temper the cream.
  • Step 7
    Once tempered, add the cream mixture to the Crock Pot and stir well before adding the lemon juice.
  • Step 8
    Dish and sprinkle generously with Parmesan to serve.
