Ingredients

  • 5 slices bacon
  • 12 ounces chicken breasts, boneless and skinless
  • 1/2 cup onion, chopped
  • 1/2 cup bell pepper, chopped
  • 1 clove garlic, minced
  • 4 cups chicken broth
  • 1 1/2 cups frozen whole kernel corn
  • 14 3/4 ounces can cream corn
  • 1/4 cup corn starch
  • 1 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 1/2 cups shredded cheddar cheese

How To Make yummy chicken corn chowder

  • Step 1
    Cook bacon in a large pot over medium heat until browned and crisp; drain on paper towels and crumble when cool enough to handle.
  • Step 2
    Sauté chicken, onion, bell pepper and garlic in hot bacon drippings; cook until chicken is no longer pink and onions begin to soften.
  • Step 3
    Add chicken broth, frozen corn and cream corn.
  • Step 4
    Combine corn starch with milk and stir into soup.
  • Step 5
    Heat to boiling over medium heat, stirring constantly; reduce heat and simmer 15 minutes.
  • Step 6
    Add salt, pepper, bacon and cheese; stir until cheese is melted.
