Ingredients
- 1 whole rotisserie chicken or roast chicken
- 6 cups water
- 1 medium onion
- 2 medium carrots
- 1/4 can cilantro chopped
- 1 cup dry white beans
- 2 teaspoons salt
- 1 tablespoon butter
How To Make white bean stew with chicken

Step 1Remove all the chicken from the bones. Reserve half the chicken meat for the stew. Set aside. Place the bones and chicken in a pressure cooker. Add 1/2 the onion, 1 of the carrots, and 10 cloves of garlic.

Step 2Pressure cook for 1 and 1/2 hours. Quick release the steam. Strain the stock through a fine mesh stainer. Discard the solids.

Step 3Place the bean is a large pot and add the stock and salt. You should have about 6 cups. Bring to a boil and turn to low and cover. Cook until the beans have absorbed about 1/2 the stock about 1 1/2 hours. Chop the remaining onion and carrot. Add to the pot and let cook 1/2 hour more. Add the reserved shredded chicken and cilantro and heat the chicken up. Stir in the butter. Serve
