Ingredients
- 1 whole chicken
- 12 cups water
- 4 small shallots sliced
- 6 slices ginger about the size of a quarter
- 4 whole star anise
- 2 cinnamon sticks
- 1/3 cup fish sauce
- 6 ounces rice sticks
- 2 cups bean sprouts
- 1/4 cup each scallions, cilantro, basil and mint chopped
- lime wedges for serving
How To Make vietnamese chicken noodle soup

Step 1Cut the chicken into pieces. Add to a large pot. Pour the water over the chicken pieces. Add the shallots, ginger,, star anise, and cinnamon sticks. Bring to a boil. Reduce heat to low and simmer 2 hours skimming the impurites from the broth. Strain the broth into a clean pot. Set the chicken aside to cool a bit.

Step 2Place the broth back on the stove and bring to a simmer. Add the fish sauce and cook on low to keep warm

Step 3Shred the chicken removing the skin and bones. Cook the noodles according to package directions.

Step 4Add noodles to bowls. Top with chicken and bean sprouts. Ladle the hot broth over the noodles. Top with remaining herbs. Add a squeeze of lime when serving
