Ingredients

  • 4 cups rich turkey or chicken broth
  • 2 cups salsa verde
  • 1 pound fresh frozen corn
  • 1/2 pound bacon
  • 1/2 pound lean ham
  • 2 cups asadero or monterrey jack cheese
  • 1/2 teaspoon thyme
  • 1 teaspoon granulated garlic
  • 1 teaspoon black pepper
  • - garnish with cilantro, opt
  • 1/4 cup bacon grease
  • 1/4 cup flour
  • 1 can 12 oz evaporated milk

How To Make tomatillo bacon & ham soup

  • Step 1
    To start you need to cook bacon and crumble. Chop cooked lean ham. Grate cheese. Make or buy salsa verde or tomatillos salsa. Also place corn in food processor and pulse a few times to break it down a little.
  • Step 2
    Start warming broth and salsa verde. Add crumbled bacon, chopped ham and corn. In a small skillet or sauce pan heat bacon grease, add four to make a thick paste. Now stir in can milk and continue stirring with a whisk to remove all lumps. Add to soup pot and stir in well. Simmer for about 30 min. stirring often. Add granulated garlic, thyme, black pepper and salt to taste.
  • Step 3
    Remove from heat and allow to cool slightly. Add grated cheese and stir till melted if cheese becomes a little stringy, add a couple squeezes of lemon juice.
