the whole enchiladea chicken soup

Soup is one of my all time favorite things to make and to eat....this is a very good one :)

Ingredients

  • 3 cups chicken broth (canned or your own)
  • 1 1/4 cups celery, chopped
  • 1/2 cup sweet yellow onion, chopped
  • 3 cups green enchilada sauce
  • 1 15 oz cans pure pumpkin
  • 10 ounces chicken , cooked and chopped ( i use the canned chicken )
  • 1 cup white or yellow corn...canned or frozen
  • - cheddar cheese, shredded ( for topping)
  • - tortilla chips ( for topping)

How To Make the whole enchiladea chicken soup

  • Step 1
    Dice celery and onion and add to chicken broth and boil
  • Step 2
    Drain chicken if using canned chicken...
  • Step 3
    Add remaining ingredients to pot and simmer for about 30 minutes
  • Step 4
    serve with shredded cheddar cheese and tortilla chips as garnish....can add sour cream as well, if desired.
  • Step 5
    ENJOY!!!!!
