Soup is one of my all time favorite things to make and to eat....this is a very good one :)

Add to Grocery List

3 c
chicken broth (canned or your own)
1 1/4 c
celery, chopped
1/2 c
sweet yellow onion, chopped
3 c
green enchilada sauce
1 15 oz can(s)
pure pumpkin
10 oz
chicken , cooked and chopped ( i use the canned chicken )
1 c
white or yellow corn...canned or frozen
cheddar cheese, shredded ( for topping)
tortilla chips ( for topping)

How to Make The Whole Enchiladea Chicken Soup


  • 1Dice celery and onion and add to chicken broth and boil
  • 2Drain chicken if using canned chicken...
  • 3Add remaining ingredients to pot and simmer for about 30 minutes
  • 4serve with shredded cheddar cheese and tortilla chips as garnish....can add sour cream as well, if desired.
  • 5ENJOY!!!!!
