Ingredients
- 3 cups chicken broth (canned or your own)
- 1 1/4 cups celery, chopped
- 1/2 cup sweet yellow onion, chopped
- 3 cups green enchilada sauce
- 1 15 oz cans pure pumpkin
- 10 ounces chicken , cooked and chopped ( i use the canned chicken )
- 1 cup white or yellow corn...canned or frozen
- - cheddar cheese, shredded ( for topping)
- - tortilla chips ( for topping)
How To Make the whole enchiladea chicken soup

Step 1Dice celery and onion and add to chicken broth and boil

Step 2Drain chicken if using canned chicken...

Step 3Add remaining ingredients to pot and simmer for about 30 minutes

Step 4serve with shredded cheddar cheese and tortilla chips as garnish....can add sour cream as well, if desired.
