  • 5 lb
    whole chicken, baked, boned and shredded
  • 4 c
    chicken broth
  • 2 c
    salsa (home made is best)
  • 1 1/2 c
    pinto beans, cooked
  • 1 c
    frozen corn

  • ·
    fresh cilantro, chopped
  • ·
    onion, chopped
  • ·
    avocado, cubed
  • ·
    lemon or lime wedges
  • ·
    tortilla chips
  • ·
    colby jack cheese, shredded

How to Make The BEST Chicken Tortilla Soup


  1. In a large pot combine, chicken, chicken broth, salsa, beans and corn. Bring to a boil. Reduce heat and let simmer while preparing toppings.
  2. Put into individual serving bowls and top with cilantro, onion, avocado, cheese and a squeeze of lime or lemon juice and crushed tortilla chips.
