  • 5 pounds whole chicken, baked, boned and shredded
  • 4 cups chicken broth
  • 2 cups salsa (home made is best)
  • 1 1/2 cups pinto beans, cooked
  • 1 cup frozen corn
  • TOPPINGS
  • - fresh cilantro, chopped
  • - onion, chopped
  • - avocado, cubed
  • - lemon or lime wedges
  • - tortilla chips
  • - colby jack cheese, shredded

How To Make the best chicken tortilla soup

  • Step 1
    In a large pot combine, chicken, chicken broth, salsa, beans and corn. Bring to a boil. Reduce heat and let simmer while preparing toppings.
  • Step 2
    Put into individual serving bowls and top with cilantro, onion, avocado, cheese and a squeeze of lime or lemon juice and crushed tortilla chips.
