When I worked full time, I was too tired to spend a lot of time in the kitchen when I got home. I love tortilla soup and experimented until I had an easy recipe I could throw together after work. The rotisserie chicken makes it so easy.

Ingredients
- 4 15 ounces cans low sodium chicken broth
- 1 16 ounces jar salsa
- 2 16 ounces cans black beans, drained & rinsed
- 1 16 ounces bag frozen corn, thawed
- 1 10 ounces can ro*tel diced tomatoes and green chilies
- 2 1/2 teaspoons cumin powder
- 1/8 teaspoon chili powder (or to taste)
- 1 - rotisserie chicken, deboned & cut into bite size pieces
- 1 - onion, chopped
- 2 - garlic cloves, minced
- 1 - small bunch cilantro (or to taste), chopped
- - juice from 1-2 limes
- - corn chips
How To Make susan's easy tortilla soup

Step 1Saute the onion and garlic in a little oil until cooked.

Step 2Add the rest of the ingredients except the cilantro and lime juice and simmer for 15 minutes until heated through.

Step 3Remove from heat and add the cilantro and lime juice.

Step 4Serve in bowls and put crushed corn chips on top.
