When I worked full time, I was too tired to spend a lot of time in the kitchen when I got home. I love tortilla soup and experimented until I had an easy recipe I could throw together after work. The rotisserie chicken makes it so easy.

4 15 oz
cans low sodium chicken broth
1 16 oz
jar salsa
2 16 oz
cans black beans, drained & rinsed
1 16 oz
bag frozen corn, thawed
1 10 oz
can ro*tel diced tomatoes and green chilies
2 1/2 tsp
cumin powder
1/8 tsp
chili powder (or to taste)
rotisserie chicken, deboned & cut into bite size pieces
onion, chopped
garlic cloves, minced
small bunch cilantro (or to taste), chopped
juice from 1-2 limes
corn chips

How to Make Susan's Easy Tortilla Soup


  • 1Saute the onion and garlic in a little oil until cooked.
  • 2Add the rest of the ingredients except the cilantro and lime juice and simmer for 15 minutes until heated through.
  • 3Remove from heat and add the cilantro and lime juice.
  • 4Serve in bowls and put crushed corn chips on top.
