Ingredients
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 1 large sweet potato, cut into chunks
- 4 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 1/2 tablespoon dried oregano
- 1/2 tablespoon paprika
- 2 boneless skinless chicken breast
- 4 cups chicken stock or tomato kombu broth
- 1/2 cup heavy cream
- 1 cup grated Parmesan cheese
How To Make sun-dried tomato soup with chicken

Step 1Place olive oil in a saucepan and add the onion and potato. Cook for about 5 minutes.

Step 2Add the garlic and sauté for about 1 minute. Add the ingredients to a Crock Pot.

Step 3Add the chicken breasts, chicken stock, sun-dried tomatoes, oregano, and paprika.

Step 4Cook 4 hours, then taste and add salt if needed. Cook on low for another 4 hours.

Step 5Add the heavy cream and Parmesan cheese. Cook until the cheese is melted. Enjoy.
