This is a great recipe to use my recipe for Tomato Kombu Broth also in my recipe box.

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 large sweet potato, cut into chunks
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 tablespoon dried oregano
  • 1/2 tablespoon paprika
  • 2 boneless skinless chicken breast
  • 4 cups chicken stock or tomato kombu broth
  • 1/2 cup heavy cream
  • 1 cup grated Parmesan cheese

How To Make sun-dried tomato soup with chicken

  • Step 1
    Place olive oil in a saucepan and add the onion and potato. Cook for about 5 minutes.
  • Step 2
    Add the garlic and sauté for about 1 minute. Add the ingredients to a Crock Pot.
  • Step 3
    Add the chicken breasts, chicken stock, sun-dried tomatoes, oregano, and paprika.
  • Step 4
    Cook 4 hours, then taste and add salt if needed. Cook on low for another 4 hours.
  • Step 5
    Add the heavy cream and Parmesan cheese. Cook until the cheese is melted. Enjoy.
