This is from my mother in law - - I kicked it up a couple notches..

Ingredients

  • 4-6 - boneless, skinless chicken breast
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon crushed red pepper flakes
  • 1 - 2 - frozen veggies (corn, green beans & carrots)
  • 6 - 10 large potatoes
  • 2 cans rotel - i use the org, flavor
  • 1 bottle spicy or regular v-8 juice - low sodium
  • 1 box chicken stock - low sodium

How To Make spicy chicken soup

  • Step 1
    trim fat off skinless, boneless breast and lay flat on lightly greased baking pan and sprinkle, garlic powder, onion powder, chili powder and pepper flakes on chicken breast and bake for at least 30 minutes or until cooked through. Pull out and either cube or shred. this depends on how you like it. I cut and cube mine.
  • Step 2
    in stock pot (soup pot) or large crock pot I add the 2 cans Rotel, the 2 bags of frozen veggies (you can use whatever veggies you want) and add the V-8 juice. Add the chicken, potatoes and the chicken stock.
  • Step 3
    I cook this in a crock pot on high until it starts to bobble, then I turn to low and cook until the potatoes and veggies are done, normally 4 or so hours. you can also do this on the stove top and simmer on med-low until done. This is also very very good the next day if there is any left.
