Ingredients
- 1 - onion
- 3 - carrots
- 500 grams chicken
- 1 cup celery
- 1 cup red pepper
- 3 cups pureed pumpkin
- 450 milliliters chicken stock or veg stock
- 1 cup sour cream
- 1 can hominy drained
- 6 tablespoons cilantro (or to taste)
- 3 tablespoons cumin
- - salt to taste
- - pepper to taste
- 1/2 teaspoon nutmeg
- 1/2 teaspoon oregano, dried
How To Make southwestern soup

Step 1Saute onion, carrot, chicken in oil in a 3 litre, heavy duty saucepan over medium high heat. Cook until chicken is no longer pink.

Step 2Add celery and capsicum; sauté 3 to 4 minutes or until vegetables are tender-crisp. Stir in pumpkin, chicken stock, sour cream, hominy (or white beans), coriander, salt, pepper, oregano, cumin, and nutmeg, then simmer over low heat for 10 to 15 minutes.
