This is an excellent, chicken soup that’s a snap to make, and sure to please… so yummy. And the good news is that you probably have all the ingredients you need. This is a great soup to take the chill off a cold day, or just any old time you crave some good, comfy soup. Besides, I’ve been informed that chicken soup is good for the soul. So, you ready… Let’s get into the kitchen.

Ingredients

  • PLAN/PURCHASE
  • 4 slices thick country bacon, chopped
  • 4 cups chicken stock, not broth
  • 1/2 pound chicken breast, boneless, skinless, cut into 1/2-inch cubes
  • 1/2 pound fully-cooked smoked sausage, cubed
  • 1/2 medium yellow onion, thinly sliced
  • 3/4 pound golden potatoes, cubed
  • 2 stalks celery, chopped
  • 1/2 cup peas, frozen variety
  • 2 medium carrots, chopped
  • 1 teaspoon crushed red pepper flakes, or to taste
  • 1/4 teaspoon ground cumin
  • 1 pinch cayenne pepper, or to taste
  • - salt, kosher variety, to taste
  • - black pepper, freshly ground, to taste
  • 8 ounces ramen noodles, precooked, per serving
  • - toasted sesame seeds, for garnish

How To Make slow cooker heaven: spicy chicken/sausage soup

  • Step 1
    PREP/PREPARE
  • Step 2
    Gather your ingredients.
  • Step 3
    Add the bacon to a skillet over medium heat.
  • Step 4
    Cook until beginning to crisp.
  • Step 5
    Drain on paper towels and reserve.
  • Step 6
    Add the chicken stock, to the bowl of a slow cooker.
  • Step 7
    Add the chicken, sausage, and onions.
  • Step 8
    Slow cook on low for 90 minutes.
  • Step 9
    After 90 minutes add the potatoes, celery, peas, carrots, red pepper flakes, cumin, cayenne. Then add some salt and pepper, to taste.

    Chef’s Note: As the temperature gets colder, I find myself adding a bit more red pepper flakes, and maybe even a bit more cayenne; conversely, as the weather warms up, I add less.

    Chef’s Tip: This dish relies on good seasoning, so taste, then season… taste, then season.

    Slow cook on low for an additional 90 minutes.

  • Step 14
    Plate with a bed of ramen noodles, and then garnish with the reserved bacon, sesame seeds, and maybe a soft-boiled egg. Enjoy.
