Ingredients
- 1 rotisserie chicken
- 1 1/2 cups shredded carrots
- 3 - spoons of minced garlic from the fridge
- 1 teaspoon parsley
- 1/2 teaspoon basil
- 1/4 teaspoon nutmeg
- 1 bay leaf
- salt & pepper to taste
- 5 cups chicken broth (4 cups in the cartons)
- 1 cup half & half (use milk)
- 2 tablespoons cornstarch (or use flour)
- 16 ounces frozen gnocchi, potato or other flavor you prefer
- 1 cup chopped spinach, fresh is best

Step 1Originally called to use chicken breasts, raw, which if I use I double from the original 3-4. Put raw chicken in bottom of crock pot, top with carrots and garlic. If using rotisserie, you don't need to put the chicken in at this time, just put the veggies and garlic and start from there.

Step 2Sprinkle with seasonings. Use S&P to your taste (I tend to omit them). Put broth over top, cover and cook on low 6-8 hours. If using breasts, take out and cut up. If using rotisserie, have it skinned, and pulled from bones, and cut up to bite size pieces.

Step 3Get rid of bay leaf. Whisk milk or half & half, and flour or cornstarch until dissolved, then into the soup. Stir it in and then add the gnocchi. Cover and turn crock pot on high. Stir in the chicken, cook 15-30 min until heated through and gnocchi cooked. Soup should also thicken up. Stir in spinach and wilt in covered crockpot, Can add more salt and pepper, then serve right away. Personally, I don't add S&P, I let whoever wants to add it to their own bowls.
