My family really likes this during cooler months. Great alternative to chilli when you just want something different.

Ingredients

  • 1 pound chicken, cooked and chopped
  • 1 can pinto beans
  • 1 can kidney beans
  • 2 cans rotel (mild or spicy, your choice)
  • 2 cans white shoepeg corn
  • 1 can stewed tomatoes
  • 2 packages taco seasoning mix
  • 1 cup chopped onion, saute until softened
  • 2 cups chicken broth (can use water)
  • 2 packages ranch style dressing mix

How To Make sante fe stew

  • Step 1
    Drain and rinse all of the canned beans and the corn. Mix all ingredients together in a dutch oven and bring to a boil. Immediately reduce heat and simmer for 30 minutes.
  • Step 2
    Serve with shredded cheese Colby Jack cheese, sour cream and tortilla chips.
