Ingredients

  • 1 lb
    chicken, cooked and chopped
  • 1 can(s)
    pinto beans
  • 1 can(s)
    kidney beans
  • 2 can(s)
    rotel (mild or spicy, your choice)
  • 2 can(s)
    white shoepeg corn
  • 1 can(s)
    stewed tomatoes
  • 2 pkg
    taco seasoning mix
  • 1 c
    chopped onion, saute until softened
  • 2 c
    chicken broth (can use water)
  • 2 pkg
    ranch style dressing mix

How to Make Sante Fe Stew

Step-by-Step

  1. Drain and rinse all of the canned beans and the corn.
    Mix all ingredients together in a dutch oven and bring to a boil. Immediately reduce heat and simmer for 30 minutes.
  2. Serve with shredded cheese Colby Jack cheese, sour cream and tortilla chips.
