Quick Creamy Chicken Noodle Soup

This recipe is a family fav! I like to do my own thing when it comes to soup. I was looking though my frigde and the ingredients were just there....and I tried it! It was welll worth it!

rotisserie chicken, precooked and store bought r the best!
3 c
chicken broth
1/2 medium
purple onion, chopped
1/2 medium
red bell pepper, chopped
1 clove
garlic, minced
1 Tbsp
butter, unsalted
1 Tbsp
olive oil, extra virgin
carrot, diced small
4 oz
cream cheese, room temperature
1/2 c
whole milk
2 tsp
salt and pepper, each
1 Tbsp
parsley flakes
1 Tbsp
cajun seasoning
1 tsp
oregano, dried
1 1/2 c
egg noodles, uncooked, the smaller the better


1Saute onion, bell pepper, and garlic in a skillet with the butter and olive oil until tender.
2Add milk and cream cheese. Cook until cheese is melted into mixture.
3Debone chicken and use as much meat as you want. If there are big peices you can chop them up or pull it apart.
4In a dutch oven, combine chicken broth, chicken, veggie mixture, and seasonings. Stir until it is mixed well.
5Let soup simmer on medium/low for about 30 minutes to an hour.
6Add noodles and cook for another 15 minutes.
7If desired, you can garnish with some fresh chopped parsley or some shredded carrots. ENJOY!
