poultry essentials: chicken/veggie stew
This is something that I put together out of items I had in my cupboards and pantries. It is a hardy stew, and can be modified in so many ways. I am using chicken, but it would be good with turkey, and even pork. Easy to make, and tastes delicious. So, you ready… Let’s get into the kitchen.

Ingredients
- PLAN/PURCHASE
- THE POTATOES
- 1 pound potatoes, diced
- 1 tablespoon non-flavored oil
- salt, Kosher variety, fine grind, as needed
- THE CHICKEN
- 2 large chicken breasts, boneless, skinless, diced
- 2 tablespoons non-flavored oil
- salt, Kosher variety, fine grind, as needed
- white pepper, freshly ground, as needed
- THE BASE
- 2 tablespoons flour, all-purpose variety
- 2 cups chicken stock, not broth
- THE SPICES
- 1/4 teaspoon thyme
- 1/4 teaspoon rosemary
- 1/4 teaspoon sage
- 1/4 teaspoon parsley
- 1/4 teaspoon paprika
- 1/4 teaspoon oregano
- 1/4 teaspoon cumin
- 1/4 teaspoon cayenne
- THE VEGGIES
- peas, carrots, broccoli, onions, celery, whatever
How To Make poultry essentials: chicken/veggie stew

Step 1PREP/PREPARE

Step 2THE POTATOES You can use just about any kind of potato you choose, even sweet potatoes. Just make sure you bake them until nice and crispy. In addition, instead of mixing them in with the stew, you could use them as a garnish on top.

Step 3THE CHICKEN I am using chicken breasts; however, you could use dark meat or a combination of the two. Up to you.

Step 4THE BASE I like to use stocks, as opposed to broths, because I think that they deliver a greater depth of flavor. If you instead choose to use broth, then try to use a low-sodium variety.

Step 5THE SPICES The spices are my choice for this recipe; feel free to modify them to your own particular tastes.

Step 6THE VEGGIES I am using frozen veggies, so they do not require much cooking. As soon as they warm up, they are ready. If you are using fresh veggies, then you will need to extend the cooking time, based on the veggies you are using.

Step 7VARIATIONS To give the stew more depth, sauté the chicken with some thinly sliced onions and garlic. Stir in some fresh egg noodles before serving. Sprinkle with freshly grated Parmesan cheese. Serve with crusty bread.

Step 8Gather your ingredients (mise en place).

Step 9The Potatoes Place a rack in the middle position, and preheat the oven to 400F/205C. Take the diced potatoes (peeled or unpeeled), and toss them with the oil and salt. Place on a parchment-lined baking sheet, and bake until cooked through and beginning to crisp, about 20 – 25 minutes.

Step 10While the potatoes are baking, do the remaining steps. You should be finished around the same time the potatoes are finished. If the potatoes finish before you need them, then turn off the oven and crack the door. Leave them in the oven to keep warm.

Step 11Dice the chicken and toss it in the oil, salt, and pepper. You can use the same bowl that you used for the potatoes.

Step 12Warm up a skillet over medium heat, and place the chicken in it.

Step 13You do not want to crowd the pan, so you may need to cook it in batches.

Step 14Sauté until cooked through and beginning to brown, about 4 – 6 minutes.

Step 15Remove the chicken and reserve. You could use the same bowl, used for the potatoes and chicken.

Step 16The Broth Whisk the flour and 1 cup of the chicken stock together, and then add to the skillet. Set the temperature to medium. Add the spices, and then simmer until the broth begins to thicken, about 3 – 5 minutes.

Step 17Add the thickened broth to a pot, then add the additional cup of stock and stir to combine. Add your veggies and chicken, then stir to warm up, about 2 – 3 minutes. Add the potatoes, and stir to warm up, about 2 – 3 minutes.

Step 18PLATE/PRESENT

Step 19Serve alone, or with nice crusty bread. Enjoy.
