How To Make pollys chicken soup
-
Step 1If using gizzards, clean and cook till tender in pressure cooker.
-
Step 2Add gizzards and water to soup pot, add the chicken and enough water to cover, add garlic and onions, simmer about 30 minutes.
-
Step 3remove chicken with a slotted spoon. add everything else to pot and simmer while you remove skin and bones from chicken.
-
Step 4add chicken back to pot and simmer till heated through and vegtables are done. Serve over rice.
-
Step 5for a thicker broth you can add some diced potatoes to this and a handful of spaghetti noodles broken into 1" pieces, it helps to thicken the broth a bit , my mother in law would remove the potatoes and smash them and add back to the soup as a thickener or she would sprinkle a little instant mashed potatoe flakes into it and serve it with tortillas on the side.
