This is a little bit different then my mothers chicken soup, this is how my mother in law made her chicken soup.

1 or 2 lb
chicken gizzards, (optional)
chicken pieces
carrots, chopped
celery stalks, chopped
4 clove
garlic , minced
onion diced
1/2 small
head cabbage, shredded
2 or 3
zucchini, sliced or diced
green pepper, chopped
can diced tomatoes
can tomatoe sauce
handful cilantro , chopped
1 tsp
adobo powder
2 pkg
bay leaves, dried
salt & pepper to taste

How to Make Pollys Chicken soup


  • 1If using gizzards, clean and cook till tender in pressure cooker.
  • 2Add gizzards and water to soup pot, add the chicken and enough water to cover, add garlic and onions, simmer about 30 minutes.
  • 3remove chicken with a slotted spoon. add everything else to pot and simmer while you remove skin and bones from chicken.
  • 4add chicken back to pot and simmer till heated through and vegtables are done. Serve over rice.
  • 5for a thicker broth you can add some diced potatoes to this and a handful of spaghetti noodles broken into 1" pieces, it helps to thicken the broth a bit , my mother in law would remove the potatoes and smash them and add back to the soup as a thickener or she would sprinkle a little instant mashed potatoe flakes into it and serve it with tortillas on the side.
