This is a little bit different then my mothers chicken soup, this is how my mother in law made her chicken soup.

Ingredients

  • 1 or 2 pounds chicken gizzards, (optional)
  • - chicken pieces
  • 4 - carrots, chopped
  • 5 - celery stalks, chopped
  • 4 cloves garlic , minced
  • 1 - onion diced
  • 1/2 small head cabbage, shredded
  • 2 or 3 - zucchini, sliced or diced
  • 1 - green pepper, chopped
  • 1 - can diced tomatoes
  • 1 - can tomatoe sauce
  • - handful cilantro , chopped
  • 1 teaspoon adobo powder
  • 2 packages sazon
  • 2 - bay leaves, dried
  • - salt & pepper to taste

How To Make pollys chicken soup

  • Step 1
    If using gizzards, clean and cook till tender in pressure cooker.
  • Step 2
    Add gizzards and water to soup pot, add the chicken and enough water to cover, add garlic and onions, simmer about 30 minutes.
  • Step 3
    remove chicken with a slotted spoon. add everything else to pot and simmer while you remove skin and bones from chicken.
  • Step 4
    add chicken back to pot and simmer till heated through and vegtables are done. Serve over rice.
  • Step 5
    for a thicker broth you can add some diced potatoes to this and a handful of spaghetti noodles broken into 1" pieces, it helps to thicken the broth a bit , my mother in law would remove the potatoes and smash them and add back to the soup as a thickener or she would sprinkle a little instant mashed potatoe flakes into it and serve it with tortillas on the side.
