Found this reciepe in a Martha Stewart Living Magazine and tweaked it a bit for my Ramsey Household.

olive oil, extra virgin

spring onions or yellow onions

coarse sea salt

chicken broth, low salt

How to Make Onion Soup for Spring


  • 1Thinly slice onions.
  • 2Heat oil in a large pot over medium-high heat. Add onions, and cook, stirring occasionally, careful not to brown the onions, about 15 minutes.
  • 3Stir in salt, stock, and water. Bring to a simmer, and cook for 15 minutes.
  • 4Remove from heat, and let cool for 15 minutes. Puree soup in a blender, starting on low speed and gradually increasing to high, blend until soup is smooth.
  • 5Serve soup with crackers or rustic bread!
