Found this reciepe in a Martha Stewart Living Magazine and tweaked it a bit for my Ramsey Household.

Ingredients
- 3 tablespoons olive oil, extra virgin
- 2 pounds spring onions or yellow onions
- 3 tablespoons coarse sea salt
- 1 1/4 cups chicken broth, low salt
- 2 cups water
How To Make onion soup for spring

Step 1Thinly slice onions.

Step 2Heat oil in a large pot over medium-high heat. Add onions, and cook, stirring occasionally, careful not to brown the onions, about 15 minutes.

Step 3Stir in salt, stock, and water. Bring to a simmer, and cook for 15 minutes.

Step 4Remove from heat, and let cool for 15 minutes. Puree soup in a blender, starting on low speed and gradually increasing to high, blend until soup is smooth.

Step 5Serve soup with crackers or rustic bread!
