Found this reciepe in a Martha Stewart Living Magazine and tweaked it a bit for my Ramsey Household.

Ingredients

  • 3 tablespoons olive oil, extra virgin
  • 2 pounds spring onions or yellow onions
  • 3 tablespoons coarse sea salt
  • 1 1/4 cups chicken broth, low salt
  • 2 cups water

How To Make onion soup for spring

  • Step 1
    Thinly slice onions.
  • Step 2
    Heat oil in a large pot over medium-high heat. Add onions, and cook, stirring occasionally, careful not to brown the onions, about 15 minutes.
  • Step 3
    Stir in salt, stock, and water. Bring to a simmer, and cook for 15 minutes.
  • Step 4
    Remove from heat, and let cool for 15 minutes. Puree soup in a blender, starting on low speed and gradually increasing to high, blend until soup is smooth.
  • Step 5
    Serve soup with crackers or rustic bread!
