spring onions or yellow onions
chicken broth, low salt
How to Make Onion Soup for Spring
2Heat oil in a large pot over medium-high heat. Add onions, and cook, stirring occasionally, careful not to brown the onions, about 15 minutes.
3Stir in salt, stock, and water. Bring to a simmer, and cook for 15 minutes.
4Remove from heat, and let cool for 15 minutes. Puree soup in a blender, starting on low speed and gradually increasing to high, blend until soup is smooth.
5Serve soup with crackers or rustic bread!
