Found this reciepe in a Martha Stewart Living Magazine and tweaked it a bit for my Ramsey Household.

  • 3 Tbsp
    olive oil, extra virgin
  • 2 lb
    spring onions or yellow onions
  • 3 Tbsp
    coarse sea salt
  • 1 1/4 c
    chicken broth, low salt
  • 2 c

How to Make Onion Soup for Spring


  1. Thinly slice onions.
  2. Heat oil in a large pot over medium-high heat. Add onions, and cook, stirring occasionally, careful not to brown the onions, about 15 minutes.
  3. Stir in salt, stock, and water. Bring to a simmer, and cook for 15 minutes.
  4. Remove from heat, and let cool for 15 minutes. Puree soup in a blender, starting on low speed and gradually increasing to high, blend until soup is smooth.
  5. Serve soup with crackers or rustic bread!
