Ingredients
- 2.5 pounds chicken or turkey parts
- 2 quarts water
- 1/2 cup pearl barley, uncooked
- 1 - medium onion, chopped
- 2 teaspoons poultry seasoning
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon paprika
- 1 - bay leaf
- 1 cup sliced carrots
- 1/2 can chopped celery
- 1/2 pound mushrooms, sliced
- 10 ounces frozen peas
- 2 tablespoons snipped fresh parsley
How To Make new brunswick barley soup

Step 1Combine chicken, water, barley, onion, poultry seasoning, salt, pepper, paprika and bay leaf in large kettle or dutch oven.

Step 2Bring to a boil.

Step 3Cover, reduce heat and simmer until chicken is tender, about minutes.

Step 4Remove chicken from broth.

Step 5Cool chicken; remove meat from bones and dice.

Step 6Add carrots, celery and mushrooms to broth.

Step 7Cover; simmer 20 minutes, stirring occasionally.

Step 8Return diced chicken to soup mixture with peas and parsley; cook until heated through.
