pearl barley, uncooked
medium onion, chopped
2 tsp
poultry seasoning
1 tsp
1/4 tsp
1/4 tsp
bay leaf
1 c
sliced carrots
1/2 can(s)
chopped celery
1/2 lb
mushrooms, sliced
10 oz
frozen peas
2 Tbsp
snipped fresh parsley

How to Make New Brunswick Barley Soup


  • 1Combine chicken, water, barley, onion, poultry seasoning, salt, pepper, paprika and bay leaf in large kettle or dutch oven.
  • 2Bring to a boil.
  • 3Cover, reduce heat and simmer until chicken is tender, about minutes.
  • 4Remove chicken from broth.
  • 5Cool chicken; remove meat from bones and dice.
  • 6Add carrots, celery and mushrooms to broth.
  • 7Cover; simmer 20 minutes, stirring occasionally.
  • 8Return diced chicken to soup mixture with peas and parsley; cook until heated through.
