Ingredients: 3 cup(s) cooked chicken (can also use turkey or ground beef.; 1 large onion chopped; 2 clove(s) garlic minced; 1 can(s) tomato puree (29.0 oz.); 28 ounce(s) chicken broth ( i make my own with instant chicken base); 1 can(s) black beans; 1 can(s) whole kernel corn; 1 can(s) diced tomatoes with green chilli (10.5 oz ); 3 tablespoon(s) lime juice; 1 teaspoon(s) salt; 1/4 teaspoon(s) black pepper; 2 teaspoon(s) ground cumin; 1/8 teaspoon(s) ground cayenne pepper; 1 teaspoon(s) chilli powder; 1 tablespoon(s) olive oil; 1 package(s) shredded cheese ( mexican blend or cheddar); 1 package(s) tortilla chips

When my grandkids are sick,this is the soup I have to make for them. I keep ingredents on hand because I can't make for one grandaughter and not the other when they are sick. And they don't fall for "I don't have the ingredents" They know I can change the ingredents and it's still good. I had eaten a tortilla soup at a restarant,and decided to make my own. I think tis is better then thiers, and a lot better then canned. Or the frozen. Enjoy!!!

Ingredients

3 cups cooked chicken (can also use turkey or ground beef.
1 large onion chopped
2 cloves garlic minced
1 can tomato puree (29.0 oz.)
28 ounces chicken broth ( i make my own with instant chicken base)
1 can black beans
1 can whole kernel corn
1 can diced tomatoes with green chilli (10.5 oz )
3 tablespoons lime juice
1 teaspoon salt
1/4 teaspoon black pepper
2 teaspoons ground cumin
1/8 teaspoon ground cayenne pepper
1 teaspoon chilli powder
1 tablespoon olive oil
1 package shredded cheese ( mexican blend or cheddar)
1 package tortilla chips

How To Make my chicken tortilla soup

Step 1

In skillet,cook onion and garlic in olive oil.

Step 2

In soup pot. combine cooked onion,garlic and all of the ingredients but the cheese and tortilla chips.
Step 3

When starts to boil, turn heat down and simmer for 10 min. Add about 1 cup of cheese to soup.
Step 4

Serve with tortilla chips and cheese on the side.
Step 5

The kids add a Tablespoon or 2 of cheese,and crush the chips up for crackers. After awhile they use the soup as a dip for thier chips.
Step 6

I have made this using frozen corn,or if I don't have Black beans,I add 2 cans of corn. You can work with it to use what you have.
