Ingredients

  • 1/2 cup chopped onion
  • 1 cup chopped celery
  • - diced carrot
  • 1/4 cup butter
  • 11/2 tablespoons flour
  • 11/2 teaspoons curry powder
  • 4 cups chicken broth
  • - apple,cored and chopped
  • 1/2 cup rice
  • - cooked chicken cut in cubes
  • - salt and pepper
  • pinch dried thyme
  • 1/2 cup heated cream(ihave used canned evaporated milk)

How To Make mulligatawny soup

  • Step 1
    saute oniona, celery, carrote and butter in large soup pot. Add flour and curry powder and cook 5 min more. Add chicken stock. Mix well and brin g to a boil, Turn down heat and simmer 1/2 hour.
  • Step 2
    Add apple, rice chicken salt and pepper and thyme. Simmer 15-20 min
  • Step 3
    Add hot cream when serving. Alot oof the ingredient measurements are approximate. A matter of taste
