Ingredients
- 1/2 cup chopped onion
- 1 cup chopped celery
- - diced carrot
- 1/4 cup butter
- 11/2 tablespoons flour
- 11/2 teaspoons curry powder
- 4 cups chicken broth
- - apple,cored and chopped
- 1/2 cup rice
- - cooked chicken cut in cubes
- - salt and pepper
- pinch dried thyme
- 1/2 cup heated cream(ihave used canned evaporated milk)
How To Make mulligatawny soup

Step 1saute oniona, celery, carrote and butter in large soup pot. Add flour and curry powder and cook 5 min more. Add chicken stock. Mix well and brin g to a boil, Turn down heat and simmer 1/2 hour.

Step 2Add apple, rice chicken salt and pepper and thyme. Simmer 15-20 min

Step 3Add hot cream when serving. Alot oof the ingredient measurements are approximate. A matter of taste
