When making up soup recipes, I usually make it up as I go along. This chicken soup is not just your average chicken soup. It has lots of flavor with spinach and cannellini beans in it. I cut chicken breasts into chunks in this recipe. I sautéed onion, celery, and carrot and threw those in, as well as minced garlic, lots of fresh herbs, and baby spinach leaves. Man, this soup turned out awesome. My husband went back for two bowls. It is now becoming cool here in Alabama, so this was a perfect meal to enjoy.

Ingredients

  • 2 tablespoons olive oil
  • 4 medium celery ribs, diced into bite-size pieces
  • 5 medium carrots, cut into coins
  • 1/2 large yellow onion, diced
  • 5 cloves garlic, minced
  • 36 ounces chicken breast halves, skinless and boneless cut into chunks
  • 4 cups whole baby spinach leaves
  • 2 cans cannellini or navy beans
  • 6 cups low-sodium chicken stock or chicken broth
  • 2 tablespoons dried thyme leaves
  • 1 tablespoon dried rosemary
  • 1 tablespoon parsley garlic salt
  • 1 cup ditalini pasta
  • 6 sprigs fresh parsley, torn into bits

How To Make most heart-healthy chicken, spinach, bean soup

  • Step 1
    Secure a Dutch oven or a stockpot. Add in about a couple of tablespoons of olive oil.
  • Step 2
    Sauté up all of the vegetables. Then add in the garlic.
  • Step 3
    Add in the chicken and brown.
  • Step 4
    Add in the beans and spinach. Stir to combined in your pot.
  • Step 5
    Now add in your chicken stock or chicken broth. Stir until everything is combined.
  • Step 6
    Add the thyme, parsley garlic salt, rosemary, and pasta. Stir.
  • Step 7
    Bring to a boil, then turn it down to a simmer. Simmer for about 10 to 15 minutes. Add fresh parsley right before serving.
  • Step 8
    Serve with crackers or crusty bread and enjoy.
