CHICKEN AND BROTH
1whole chicken boiled
1diced peeled potato
1 1/2 Tbspchicken base
1 tspsalt and pepper in with chicken
1 box[dozen] eggs
5-6 call purpose flour [might need more or less]
2 tspbaking powder
How to Make Mom's Slides
- In a large soup pot boil chicken and remove from pot and let cool enough to remove chicken from bone and add to pot. add chicken base to pot.
- Whip with a wire whip the eggs, add 1/2 flour, salt, baking powder. Stir adding flour as you go until you have a dough ball that it would be possible to roll out with rolling pin. Using flour on counter or large cutting board place 1/3 dough on surface sprinkling some flour on top. Roll dough out fairly large, then cut it into 2 inch squares and add to boiling broth.
- Once all dough is cut and placed in boiling broth lower heat continue cooking for 30+ minutes stirring often it will thicken as it cooks. It is a large square noodle soup, thick and rich.
