Ingredients For mom's chicken soup

  • 1 lg
    whole chicken cut up
  • 1 lg
    marrow bone
  • celery, onion and carrots (to your liking)
  • 1 lb
    ground turkey
  • 2
    eggs
  • 1/2 c
    breadcrumbs
  • 1/2 c
    grated pecorino cheese
  • wide noodles or rice

How To Make mom's chicken soup

    Clean the chicken and put the pieces in large pot. Add marrow bone, celery, onion and carrots. Cover with water about 4 inches above. Cover and boil for about 3 hours. Take chicken out being careful to remove the bones. Adjust the seasoning with salt, pepper and chicken boullion cubes. Put the cubes in first starting with about 3. Do this while the soup is boiling. When you get the soup seasoned to your taste in a bowl put ground turkey, eggs, breadcrumbs and grated cheese. Mix by hand and make small meatballs. Drop into boiling soup and let boil about 20 minutes. If using rice, cook it in a separate pot making sure it is tender. Start by putting 2 cups of cooked rice in and let it sit about 1/2 hour before you put any more in so that you don't add too much because it expands. If you are using noodles, precook noodles in a separate pot very al dente and put in soup. Make the soup as thick or thin as you want with the rice or noodles. Also great with ditalini pasta. Follow the directions on box in a separate pot but also cook al dente before you add to soup.
