I wanted something different from a regular chicken soup and I came up with this recipe after having something similar at a local restaurant. This is one of our family's favorites.

Ingredients
- 3 - chicken breasts
- 1 medium onion
- 2 cans chicken broth
- 2 tablespoons butter, unsalted
- 1 tablespoon cumin
- 1 teaspoon cilantro, dried
- 1 teaspoon oregano, dried
- 1 can diced tomatoes with garlic
- 2 cloves garlic
- 2 tablespoons tomato paste, italian
- 1 can chopped green chiles
- 1/2 teaspoon chile powder
How To Make mexican chicken soup

Step 1Boil chicken breasts in water til done. Cool and remove meat. Strain broth and reserve.

Step 2Chop onion and mince garlic. Saute onion and garlic in butter, over low heat, til soft. Add cumin; stir. Add reserved and canned chicken broth. Add tomatoes, paste, chilies, oregano,chile powder and cilantro. Stir well to melt the paste. Cut chicken into bite size pieces and add to soup. Cook over low heat for 1 hour.
