Ingredients
- 4-5 pounds young hen, cut in pieces
- 4 quarts water
- 1 large onion, quartered
- 3 - ribs celery with leaves, chopped
- 3 - carrots, scraped and chopped
- 4 teaspoons dried chicken soup base
- 1-2 teaspoon salt
- - cooked rice, cooked noodles, or prepared matzo balls
How To Make mama’s chicken soup

Step 1Put hen in water in large soup pot. Bring to boil and skim. Add onion, celery, carrots, soup base and salt. Cover and simmer til chicken is tender, about 2 hours.

Step 2Remove chicken and reserve for other dishes. Strain broth and return to pot. Return carrots to broth and adjust seasoning. To serve, warm slowly and add rice, noodles or matzo balls. Serves 8 to 10
