Ingredients
- FOR THE CHICKEN
- 1 stalk lemongrass minced
- 1 small shallot finely chopped
- 4 cloves garlic minced
- 1 tablespoon each sugar and fish sauce
- 1 pound boneless skinless chicken cut into pieces
- NOODLE CALLOT
- 12 ounces rice noodles
- 6 cups chicken stock
- 1 tablespoon fish sauce
- 1 tablespoon chili garlic sauce
- TOPPINGS
- spinach
- bean sprouts
- scallions
- cilantro
- lime wedges
How To Make lemongrass chicken noodle bowl

Step 1For the chicken Mix the first 5 ingredients together. Stir in the chicken and let marinate for 1 hour at room temp or overnight in the fridge.

Step 2Place the chicken stock in a large pot. Add the fish sauce and chili garlic sauce. Bring to a boil. Add the chicken with the marinade and cook about 8 minutes until the chicken is cooked.

Step 3While the chicken is cooking cook the noddles according to package directions. Drain.

Step 4Place the noodles in 2 bowls. Add the chicken and stock. Top with toppings of choice. Serve with a squeeze of lime.
