Ingredients For lemongrass chicken noodle bowl

  • 1 stalk
    lemongrass minced
  • 1 sm
    shallot finely chopped
  • 4 clove
    garlic minced
  • 1 Tbsp
    each sugar and fish sauce
  • 1 lb
    boneless skinless chicken cut into pieces
  • 12 oz
    rice noodles
  • 6 c
    chicken stock
  • 1 Tbsp
    fish sauce
  • 1 Tbsp
    chili garlic sauce
  • spinach
  • bean sprouts
  • scallions
  • cilantro
  • lime wedges

How To Make lemongrass chicken noodle bowl

    For the chicken Mix the first 5 ingredients together. Stir in the chicken and let marinate for 1 hour at room temp or overnight in the fridge.

    Place the chicken stock in a large pot. Add the fish sauce and chili garlic sauce. Bring to a boil. Add the chicken with the marinade and cook about 8 minutes until the chicken is cooked.

    While the chicken is cooking cook the noddles according to package directions. Drain.

    Place the noodles in 2 bowls. Add the chicken and stock. Top with toppings of choice. Serve with a squeeze of lime.
