Lelli's Minestrone Soup

Ingredients

3/4 cchopped onion
-
2 Tbspbutter
-
2 can(s)16 oz cans mixed vegetables (drained)

1-32oz can(s)chicken broth
-
2- 15oz can(s)cannelini beans (drained) may sub great northen beans
-
1- 14oz can(s)crushed tomatoes
-
1-8oz boxfrozen spinach
-
1-6oz can(s)tomato paste
-
1 tspgarlic powder
-
1 tspdried parsley
-
1/2 tsppepper
-
1 tspsalt
-
1/2 tspbasil
-
1/3 cmacaroni, elbow
-
1/4 cparmesan cheese
-
1 chalf and half
How to Make Lelli's Minestrone Soup
- saute onion in margarine
- add the above ingredients and simmer for 1 1/2 hours
- process at least half of the soup in a blender. or use a stick blender
- add 1/3 cup macaroni, 1/4 cup parmesan cheese and 1 cup half and half
- cook for at least 20 minutes more
- serve with crusty bread and additional parmesan cheese
