Ingredients
- 3/4 cup chopped onion
- 2 tablespoons butter
- 2 cans 16 oz cans mixed vegetables (drained)
- 1-32oz can chicken broth
- 2- 15oz cans cannelini beans (drained) may sub great northen beans
- 1- 14oz cans crushed tomatoes
- 1-8oz box frozen spinach
- 1-6oz can tomato paste
- 1 teaspoon garlic powder
- 1 teaspoon dried parsley
- 1/2 teaspoon pepper
- 1 teaspoon salt
- 1/2 teaspoon basil
- 1/3 cup macaroni, elbow
- 1/4 cup parmesan cheese
- 1 cup half and half
How To Make lelli's minestrone soup

Step 1saute onion in margarine

Step 2add the above ingredients and simmer for 1 1/2 hours

Step 3process at least half of the soup in a blender. or use a stick blender

Step 4add 1/3 cup macaroni, 1/4 cup parmesan cheese and 1 cup half and half

Step 5cook for at least 20 minutes more

Step 6serve with crusty bread and additional parmesan cheese
