leftover chicken noodle soup
We buy rotisserie chicken at the market a few times per month, and I love to make soup with the left over chicken. The broth for the soup is really flavorful, and it is packed with good stuff. I like to make it on a chilly day, or when the little one isn't feeling well. She loves her mama's chicken noodle soup :)

Ingredients
- 4 cups chicken stock
- 2 cups water
- 2 teaspoons chicken base
- 1 3/4 cups rotini pasta
- 1 cup chopped celery
- 1 1/2 cups chopped carrots
- 1 small onion, chopped
- 1 tablespoon olive oil
- 3 cups cooked chicken
- 1 tablespoon parsley flakes
- 1 teaspoon black pepper
How To Make leftover chicken noodle soup

Step 1Add oil to a large pot and heat over medium setting. Add onion, carrots, and celery - and cook until onion is soft.

Step 2Next, add your stock and water. Bring to a boil. Add in the chicken base, and cook until carrots are tender.

Step 3Reduce heat to a medium boil, and add in your pasta and chicken. Cook for about 10 minutes or until pasta is done. Stir in your parsley flakes and black pepper. Serve and enjoy.
