Leftover Chicken Noodle Soup

We buy rotisserie chicken at the market a few times per month, and I love to make soup with the left over chicken. The broth for the soup is really flavorful, and it is packed with good stuff. I like to make it on a chilly day, or when the little one isn't feeling well. She loves her mama's chicken noodle soup :)

  • 4 c
    chicken stock
  • 2 c
  • 2 tsp
    chicken base
  • 1 3/4 c
    rotini pasta
  • 1 c
    chopped celery
  • 1 1/2 c
    chopped carrots
  • 1 small
    onion, chopped
  • 1 Tbsp
    olive oil
  • 3 c
    cooked chicken
  • 1 Tbsp
    parsley flakes
  • 1 tsp
    black pepper

How to Make Leftover Chicken Noodle Soup


  1. Add oil to a large pot and heat over medium setting. Add onion, carrots, and celery - and cook until onion is soft.
  2. Next, add your stock and water. Bring to a boil. Add in the chicken base, and cook until carrots are tender.
  3. Reduce heat to a medium boil, and add in your pasta and chicken. Cook for about 10 minutes or until pasta is done. Stir in your parsley flakes and black pepper. Serve and enjoy.
