leftover chicken noodle soup

We buy rotisserie chicken at the market a few times per month, and I love to make soup with the left over chicken. The broth for the soup is really flavorful, and it is packed with good stuff. I like to make it on a chilly day, or when the little one isn't feeling well. She loves her mama's chicken noodle soup :)

Ingredients

  • 4 cups chicken stock
  • 2 cups water
  • 2 teaspoons chicken base
  • 1 3/4 cups rotini pasta
  • 1 cup chopped celery
  • 1 1/2 cups chopped carrots
  • 1 small onion, chopped
  • 1 tablespoon olive oil
  • 3 cups cooked chicken
  • 1 tablespoon parsley flakes
  • 1 teaspoon black pepper

How To Make leftover chicken noodle soup

  • Step 1
    Add oil to a large pot and heat over medium setting. Add onion, carrots, and celery - and cook until onion is soft.
  • Step 2
    Next, add your stock and water. Bring to a boil. Add in the chicken base, and cook until carrots are tender.
  • Step 3
    Reduce heat to a medium boil, and add in your pasta and chicken. Cook for about 10 minutes or until pasta is done. Stir in your parsley flakes and black pepper. Serve and enjoy.
