Ingredients

  • 1/2 lb
    ground beef or ground turkey
  • 1
    egg
  • 2 Tbsp
    dry bread crumbs
  • 2 Tbsp
    grated cheese
  • 1/2 tsp
    basil
  • 1/2 tsp
    onion powder
  • 5 3/4 c
    chicken broth
  • 2 c
    fresh spinach or escarole
  • 1/2 c
    uncooked orzo
  • 1/3 c
    grated carrot

How to Make AUNT LIZ's ITALIAN WEDDING SOUP

Step-by-Step

  1. Combine meat, egg, breadcrumbs, cheese and seasonings. Shape into mini meatballs.
  2. Heat broth to boiling. Carefully drop meatballs into boiling broth.
  3. Add spinach or escarole, orzo and carrot. Bring to a boil. Reduce heat and cook at a slow boil for 10 minutes or until orzo is tender stirring frequently.
