Uncle Ralph and Roger had absolutely nothing to do with this recipe. Uncle Ralph just liked to eat it. Serve with some nice crusty bread

Ingredients

  • 1/2 pound ground beef or ground turkey
  • 1 - egg
  • 2 tablespoons dry bread crumbs
  • 2 tablespoons grated cheese
  • 1/2 teaspoon basil
  • 1/2 teaspoon onion powder
  • 5 3/4 cups chicken broth
  • 2 cups fresh spinach or escarole
  • 1/2 cup uncooked orzo
  • 1/3 cup grated carrot

How To Make aunt liz's italian wedding soup

  • Step 1
    Combine meat, egg, breadcrumbs, cheese and seasonings. Shape into mini meatballs.
  • Step 2
    Heat broth to boiling. Carefully drop meatballs into boiling broth.
  • Step 3
    Add spinach or escarole, orzo and carrot. Bring to a boil. Reduce heat and cook at a slow boil for 10 minutes or until orzo is tender stirring frequently.
