Ingredients
- 1/2 pound ground beef or ground turkey
- 1 - egg
- 2 tablespoons dry bread crumbs
- 2 tablespoons grated cheese
- 1/2 teaspoon basil
- 1/2 teaspoon onion powder
- 5 3/4 cups chicken broth
- 2 cups fresh spinach or escarole
- 1/2 cup uncooked orzo
- 1/3 cup grated carrot
How To Make aunt liz's italian wedding soup

Step 1Combine meat, egg, breadcrumbs, cheese and seasonings. Shape into mini meatballs.

Step 2Heat broth to boiling. Carefully drop meatballs into boiling broth.

Step 3Add spinach or escarole, orzo and carrot. Bring to a boil. Reduce heat and cook at a slow boil for 10 minutes or until orzo is tender stirring frequently.
