Uncle Ralph and Roger had absolutely nothing to do with this recipe. Uncle Ralph just liked to eat it. Serve with some nice crusty bread

Ingredients

ground beef or ground turkey

egg
2 Tbsp
dry bread crumbs
2 Tbsp
grated cheese
1/2 tsp
basil
1/2 tsp
onion powder
5 3/4 c
chicken broth
2 c
fresh spinach or escarole
1/2 c
uncooked orzo
1/3 c
grated carrot

How to Make AUNT LIZ's ITALIAN WEDDING SOUP

Step-by-Step

  • 1Combine meat, egg, breadcrumbs, cheese and seasonings. Shape into mini meatballs.
  • 2Heat broth to boiling. Carefully drop meatballs into boiling broth.
  • 3Add spinach or escarole, orzo and carrot. Bring to a boil. Reduce heat and cook at a slow boil for 10 minutes or until orzo is tender stirring frequently.
