fresh spinach or escarole
How to Make AUNT LIZ's ITALIAN WEDDING SOUP
1Combine meat, egg, breadcrumbs, cheese and seasonings. Shape into mini meatballs.
2Heat broth to boiling. Carefully drop meatballs into boiling broth.
3Add spinach or escarole, orzo and carrot. Bring to a boil. Reduce heat and cook at a slow boil for 10 minutes or until orzo is tender stirring frequently.
