italian potato soup
This is a recipe I grew up on but adjusted to make it easy and convenient. My grandmother made this often when I grew up in the early 60's. She raised chickens in her back yard and made broth before frying or baking the chicken so we always had broth for soups and gravies. Try this , I'm sure it will become a favorite.

Ingredients
- 5 large potatoes
- 1 pound frest italian sausage
- 1 large yellow onion
- 3-4 carrots
- 3-4 celery ribs
- 1 bag chopped kale or spinach
- 2 quarts chicken broth
- 1/2 teaspoon crushed red pepper flakes
How To Make italian potato soup

Step 1Prepare your homemade broth or use a box broth or bone broth (I have done both).

Step 2chop potatoes into med chunks dice Carrots, Celery and onions and some crushed red pepper flakes to your desired heat

Step 3In your soup pan brown off the sausage until it's cooked add your veggies and saute slightly then add your broth when Your veggies are cooked through add the kale or spinach ( kale takes longer to cook than spinach.)

Step 4lastly add about a cup ( more or less to your liking) heat through and enjoy
