Ingredients
- 4-5 pounds rotisserie chicken cut into small pieces
- 1 teaspoon olive oil
- 1 medium red onion finely chopped
- 4 cloves minced garlic
- 4 ounces can diced green chilies
- 2 1/2 cups frozen white shoepeg corn
- 1/2 cup dry white wine
- 2 teaspoons cumin, chili powder
- dash cayenne pepper to taste
- 3 cans chicken broth (14oz)
- 2 cans diced tomatoes (14oz)
- 2 cans tomatoe sauce (8oz)
- 2 cans (14oz) black beans drained and rinsed
- 1/2 cup green onion, sour cream, mild cheddar cheese
- - tortilla chips fresh or store bought
How To Make homemade chicken tortilla soup

Step 1saute the onions and garlic in large stock pot with the olive oil until onions are soft

Step 2Add green chili corn white wine black beans chicken broth and diced tomatoes and sauce

Step 3bring mixture to a boil about 5 minutes

Step 4turn down the heat and add chopped chicken

Step 5summer on low heat for half an hour stirring occasionally

Step 6Serve the soup topped with fresh tortilla chips, cheese, sour cream and green onions
