Something that I make when my husband is getting sick or when its just cold outside.

Ingredients

  • 4-5 pounds rotisserie chicken cut into small pieces
  • 1 teaspoon olive oil
  • 1 medium red onion finely chopped
  • 4 cloves minced garlic
  • 4 ounces can diced green chilies
  • 2 1/2 cups frozen white shoepeg corn
  • 1/2 cup dry white wine
  • 2 teaspoons cumin, chili powder
  • dash cayenne pepper to taste
  • 3 cans chicken broth (14oz)
  • 2 cans diced tomatoes (14oz)
  • 2 cans tomatoe sauce (8oz)
  • 2 cans (14oz) black beans drained and rinsed
  • 1/2 cup green onion, sour cream, mild cheddar cheese
  • - tortilla chips fresh or store bought

How To Make homemade chicken tortilla soup

  • Step 1
    saute the onions and garlic in large stock pot with the olive oil until onions are soft
  • Step 2
    Add green chili corn white wine black beans chicken broth and diced tomatoes and sauce
  • Step 3
    bring mixture to a boil about 5 minutes
  • Step 4
    turn down the heat and add chopped chicken
  • Step 5
    summer on low heat for half an hour stirring occasionally
  • Step 6
    Serve the soup topped with fresh tortilla chips, cheese, sour cream and green onions
