Something that I make when my husband is getting sick or when its just cold outside.

Ingredients For homemade chicken tortilla soup

  • 4-5 lb
    rotisserie chicken cut into small pieces
  • 1 tsp
    olive oil
  • 1 md
    red onion finely chopped
  • 4 clove
    minced garlic
  • 4 oz
    can diced green chilies
  • 2 1/2 c
    frozen white shoepeg corn
  • 1/2 c
    dry white wine
  • 2 tsp
    cumin, chili powder
  • dash
    cayenne pepper to taste
  • 3 can
    chicken broth (14oz)
  • 2 can
    diced tomatoes (14oz)
  • 2 can
    tomatoe sauce (8oz)
  • 2 can
    (14oz) black beans drained and rinsed
  • 1/2 c
    green onion, sour cream, mild cheddar cheese
  • tortilla chips fresh or store bought

How To Make homemade chicken tortilla soup

  • 1
    saute the onions and garlic in large stock pot with the olive oil until onions are soft
  • 2
    Add green chili corn white wine black beans chicken broth and diced tomatoes and sauce
  • 3
    bring mixture to a boil about 5 minutes
  • 4
    turn down the heat and add chopped chicken
  • 5
    summer on low heat for half an hour stirring occasionally
  • 6
    Serve the soup topped with fresh tortilla chips, cheese, sour cream and green onions
