    rotisserie chicken cut into small pieces
  • 1 tsp
    olive oil
  • 1 medium
    red onion finely chopped
  • 4 clove
    minced garlic
  • 4 oz
    can diced green chilies
  • 2 1/2 c
    frozen white shoepeg corn
  • 1/2 c
    dry white wine
  • 2 tsp
    cumin, chili powder
  • dash(es)
    cayenne pepper to taste
  • 3 can(s)
    chicken broth (14oz)
  • 2 can(s)
    diced tomatoes (14oz)
  • 2 can(s)
    tomatoe sauce (8oz)
  • 2 can(s)
    (14oz) black beans drained and rinsed
  • 1/2 c
    green onion, sour cream, mild cheddar cheese
  • ·
    tortilla chips fresh or store bought

How to Make homemade chicken tortilla soup


  1. saute the onions and garlic in large stock pot with the olive oil until onions are soft
  2. Add green chili corn white wine black beans chicken broth and diced tomatoes and sauce
  3. bring mixture to a boil about 5 minutes
  4. turn down the heat and add chopped chicken
  5. summer on low heat for half an hour stirring occasionally
  6. Serve the soup topped with fresh tortilla chips, cheese, sour cream and green onions
