Ingredients
- 1 whole rotisserie chicken
- 4 quarts chicken stock
- 2 tablespoons coriander seeds
- 3 whole cloves
- 1 medium onion quartered
- 2 inch piece of ginger
- 3 tablespoons fish sauce
- 1 tablespoon sugar
- 14 ounces dried rice noodles
- 1 cup cilantro chopped
- 1/2 cup scallions chopped
- 2 limes cut into wedges
How To Make hanoi style chicken pho

Step 1Separate the chicken from the bones then shred it and set aside.

Step 2In a stock pot add the chicken bones and stock and bring to a boil. Cook for 15 minutes. Meanwhile in a small saucepan add the coriander and cloves and toss over medium heat toasting for 4 minutes. Add the toasted spices, onions, and ginger to the broth.

Step 3Reduce the heat and simmer 15 more minutes. Strain out the solids discarding them leaving the broth in the stock pot. Stir in the fish sauce and sugar.

Step 4In a sparate saucepan cook the noodles as directed on package. Drain. Transfer the noodles to a bowl. Top with shredded chicken, cilantro,and scallions. Serve with lime wedges.
