good ol' chicken and dumplings

This is a down-home type of recipe that is super simple to make. So if you're craving comfort food but don't want to fuss, this is your recipe. *Optional - If you want to add veggies, such as a bag of frozen mixed veggies, you can add it to the boiling broth before adding the dumplings.

Ingredients For good ol' chicken and dumplings

  • 12 c
    chicken broth
  • 1/2 c
    all-purpose flour, or as needed
  • Two - 16.3 oz
    cans refrigerated pillsbury grands southern homestyle original biscuits
  • 1 c
    half and half
  • 4 c
    cooked chicken, shredded (from a rotisserie chicken)
  • 1 tsp
    kosher salt, or to taste
  • 1 tsp
    freshly ground black pepper, or to taste

How To Make good ol' chicken and dumplings

    In a large pot over medium heat, bring the chicken broth up to a boil, then turn it down to a simmer while you work on the dumplings.

    On a flour-dusted surface, lay out all of the individual biscuits. Then take a sharp knife, or pizza cutter, and cut them each into three pieces in one direction. Then cut them into three pieces going in the other direction - yielding 9 lil dumplings per biscuit. Note: you may need to add more flour to your surface as you go.

    Put these lil dumplings into the simmering chicken broth as they are cut - putting all of the dusting flour into the broth with them.

    Now go ahead and add that half and half, shredded chicken, and your salt and pepper to taste. Put a lid on your pot and let that mixture simmer for approximately 20 more minutes. You want the dumplings to be completely cooked through and everything nicely heated and ready to ladle into soup bowls. Enjoy!
