Ingredients

  • 1 pound boneless skinless chicken thighs
  • salt and pepper
  • 2 tablespoons olive oil
  • BROTH
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 small yellow onion, chopped
  • 8 cups chicken stock
  • 1 large bay leaf
  • 1 1/2 teaspoons ground turmeric
  • 3 teaspoons lemon juice
  • 2 tablespoons fresh parsley
  • salt and pepper
  • PASTA
  • 1 cup ditalini pasta or any small pasta of choice
  • salt

How To Make golden chicken pasta soup

  • Step 1
    Chicken: Place oil in a pot and add the chicken and cook until no longer pink. Place on a cutting board and when cool enough to handle shred.
  • Step 2
    In the same pot add the garlic and ginger and cook stirring 30 seconds. Add the onion and cook 5 minutes.
  • Step 3
    Add the chicken stock, turmeric, and bay leaf and bring to a boil reduce heat and simmer 20 minutes. Taste and adjust for salt and pepper. Add the lemon juice and parsley. Remove the bay leaf.
  • Step 4
    Cook the pasta in salted water and drain when done. Add the pasta and chicken and cook 5 more minutes.
