Ingredients
- 1 pound boneless skinless chicken thighs
- salt and pepper
- 2 tablespoons olive oil
- BROTH
- 4 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 small yellow onion, chopped
- 8 cups chicken stock
- 1 large bay leaf
- 1 1/2 teaspoons ground turmeric
- 3 teaspoons lemon juice
- 2 tablespoons fresh parsley
- salt and pepper
- PASTA
- 1 cup ditalini pasta or any small pasta of choice
- salt
How To Make golden chicken pasta soup

Step 1Chicken: Place oil in a pot and add the chicken and cook until no longer pink. Place on a cutting board and when cool enough to handle shred.

Step 2In the same pot add the garlic and ginger and cook stirring 30 seconds. Add the onion and cook 5 minutes.

Step 3Add the chicken stock, turmeric, and bay leaf and bring to a boil reduce heat and simmer 20 minutes. Taste and adjust for salt and pepper. Add the lemon juice and parsley. Remove the bay leaf.

Step 4Cook the pasta in salted water and drain when done. Add the pasta and chicken and cook 5 more minutes.
