French market soup is hearty, meaty, full of flavor, and versatile. It's perfect for Christmas Eve get-togethers with family! I also use it to meet all of my late mother's Southern "good luck" menu requirements for New Year's Day.

This makes a big ole pot of soup that's full of meat, beans, and veggies. It smells wonderful while simmering and you can hardly wait for this to be done. The beans cook down and make the soup thick and hearty. Perfect for those cooler months served with a piece of corn bread.

Ingredients
- 2 cups 15-bean dry bean mix
- 1 tablespoon salt
- 3 cups water
- 1 - ham hock or meaty ham bone
- 2 - bay leaves
- 28 ounces diced tomatoes
- 2 - onions, chopped
- 2 cloves garlic
- 6 stalks chopped celery
- 1 dash cayenne pepper
- 1 pound sliced turkey sausage
- 4-5 - chicken thighs
How To Make french market soup

Step 1Add beans, salt, 3 c. water, ham hock, and bay leaves in a large pot. Simmer covered 3 hours.

Step 2Add tomatoes, onions, garlic cloves, and celery. Add pinch cayenne. Simmer 1-1/2 hours uncovered.

Step 3Add smoked turkey sausage and chicken thighs. Cook until chicken falls off bones.

Step 4Remove bones, return chicken to the soup, season to taste, as needed, with some red chunky salsa, more salt, pepper, garlic powder, a squeeze of lime, etc. Enjoy! Reheats beautifully.
