fiesta chicken soup
(1 RATING)
I work in our middle school cafeteria and am responsible for making the soup of the day, and this recipe is a big hit with students and faculty alike. It goes together quickly and really warms you up! Of course, I make about 6 times these amounts for the school. :)

How To Make fiesta chicken soup
-
Step 1In large saucepan, combine chicken, broth, refried beans, salsa, and corn. Bring to a boil, reduce heat, and simmer uncovered for 10 min. Stir in rice; cover and remove from heat. Let stand 5-10 min., stir, and ready to eat!
-
Step 2I like to serve with cornbread or tortilla chips. This is a hearty soup!
