I work in our middle school cafeteria and am responsible for making the soup of the day, and this recipe is a big hit with students and faculty alike. It goes together quickly and really warms you up! Of course, I make about 6 times these amounts for the school. :)

Ingredients

  • 2 medium boneless chicken breasts, cooked and diced
  • 2 14- ounces cans chicken broth
  • 1 16- ounces can refried beans
  • 1/2 to 1 cups salsa (according to taste)
  • 1 cup frozen whole-kernel corn
  • 1 cup instant rice, uncooked (not regular rice)

How To Make fiesta chicken soup

  • Step 1
    In large saucepan, combine chicken, broth, refried beans, salsa, and corn. Bring to a boil, reduce heat, and simmer uncovered for 10 min. Stir in rice; cover and remove from heat. Let stand 5-10 min., stir, and ready to eat!
  • Step 2
    I like to serve with cornbread or tortilla chips. This is a hearty soup!
