This is super easy to make and very tasty!

Ingredients

  • 3 cans chicken broth
  • 2 cans corn, cream-style
  • 2 10 oz. cans red enchilada sauce
  • 1 sm. can green chiles
  • 1 10 oz. cans chunk white chicken, undrained
  • 1 cup orzo pasta, uncooked
  • 1 1/2 teaspoons cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon oregano

How To Make enchilada pasta soup

  • Step 1
    Combine broth, corn, enchilada sauce and chiles; mix well. Bring to a boil. Add remaining soup ingredients. Reduce heat to low; simmer 8 minutes or until pasta is tender.
  • Step 2
    Garnish with sour cream, co-jack cheese and crushed tortilla chips.
