Hearty inexpensive stew to warm up a cold day

  • 1 medium
    onion chopped
  • 1 c
    sliced carrots
  • 2 Tbsp
    olive oil, extra virgin
  • ·
    kosher salt
  • ·
    black pepper
  • pkg
    chicken thighs , bone in skin on
  • 2 lb
    fresh green beans
  • 6
    red potatoes cut in bite size pieces
  • ·
    garlic powder
  • ·
  • 1/2 tsp
    dried thyme
  • 1/2 can(s)
    tomato paste
  • 2 qt
    chicken stock

How to Make Easy Chicken Stew


  1. Add onion , carrot, olive oil and chicken to pot , season with Garlic powder , paprika , kosher salt and black pepper , cover with 1 qt chicken stock and simmer for 1 hour until meat falls off bone.
  2. Remove all skin and bones from pot, add snapped green beans and red potatoes and thyme, and tomato paste .
  3. Continue to simmer approx 1 hour more , adding more chicken stock as needed . Serve hot with corn bread of biscuits .
