Hearty inexpensive stew to warm up a cold day

Ingredients

  • 1 medium onion chopped
  • 1 cup sliced carrots
  • 2 tablespoons olive oil, extra virgin
  • - kosher salt
  • - black pepper
  • package chicken thighs , bone in skin on
  • 2 pounds fresh green beans
  • 6 - red potatoes cut in bite size pieces
  • - garlic powder
  • - paprika
  • 1/2 teaspoon dried thyme
  • 1/2 can tomato paste
  • 2 quarts chicken stock

How To Make easy chicken stew

  • Step 1
    Add onion , carrot, olive oil and chicken to pot , season with Garlic powder , paprika , kosher salt and black pepper , cover with 1 qt chicken stock and simmer for 1 hour until meat falls off bone.
  • Step 2
    Remove all skin and bones from pot, add snapped green beans and red potatoes and thyme, and tomato paste .
  • Step 3
    Continue to simmer approx 1 hour more , adding more chicken stock as needed . Serve hot with corn bread of biscuits .
