Ingredients
- 1 medium onion chopped
- 1 cup sliced carrots
- 2 tablespoons olive oil, extra virgin
- - kosher salt
- - black pepper
- package chicken thighs , bone in skin on
- 2 pounds fresh green beans
- 6 - red potatoes cut in bite size pieces
- - garlic powder
- - paprika
- 1/2 teaspoon dried thyme
- 1/2 can tomato paste
- 2 quarts chicken stock
How To Make easy chicken stew

Step 1Add onion , carrot, olive oil and chicken to pot , season with Garlic powder , paprika , kosher salt and black pepper , cover with 1 qt chicken stock and simmer for 1 hour until meat falls off bone.

Step 2Remove all skin and bones from pot, add snapped green beans and red potatoes and thyme, and tomato paste .

Step 3Continue to simmer approx 1 hour more , adding more chicken stock as needed . Serve hot with corn bread of biscuits .
