drunken chicken soup

We needed a good warming soup for a cold January day. Since hubby needed leave for work, I needed to pull something together fast! Served with homemade bread. Success!

Ingredients For drunken chicken soup

  • 3 clove
    garlic, minced
  • 1 lg
    onion, very thinly sliced
  • olive oil, as needed
  • 1 jar
    vodka sauce (prego 24 ozs)
  • 1 box
    swanson chicken broth (32 ozs)
  • 1 can
    10 oz chicken, drained & cubed
  • 2 c
    farfalle pasta, cooked according to directions
  • 1 c
    whole milk
  • parmesan cheese
  • salt and cracked pepper

How To Make drunken chicken soup

    Start with a little olive oil in bottom of soup pot, add minced garlic & thinly sliced onion. Saute till soft. Onion translucent.

    Meanwhile in another pot cook farfalle according to package directions.

    Drain canned chicken, chop coarsely. Add to pot with onions & garlic. Heat, let brown slightly. Salt & pepper to taste.

    Add the chicken broth. Add jar of Vodka sauce, and 1 cup milk. Drain, pasta and add to pot. Let it gently warm through, scoop up into individual bowls. Top with parm & more cracked sea salt & cracked pepper as desired. Enjoy!
