creamy chicken & wild rice soup

This is SO easy and so delicious. My boys aren't big soup eaters but this is so filling they actually request it. I've even made double batches to satisfy this hungry group!

Ingredients

  • 9 ounces fully cooked chicken strips (precooked tyson grilled is what i use)
  • 6.2 ounces uncle ben's long grain & wild rice fast recipe
  • 1 1/2 cups chicken broth
  • 1/2 cup diced carrot
  • 1/2 cup diced celery
  • 1/2 cup diced onion
  • 1 teaspoon minced garlic
  • 3 cups milk
  • 1 tablespoon flour
  • 1 1/2 tablespoons cold water

How To Make creamy chicken & wild rice soup

  • Step 1
    Cut the precooked chicken into 1/2 to 1 inch pieces. Set aside.
  • Step 2
    Prepare rice according to package directions. Be sure to include seasoning packet.
  • Step 3
    Meanwhile, in a large saucepan, bring chicken broth to a boil. Add carrots, celery, onion and garlic. Reduce heat and simmer for 5-7 minutes or until vegetables are tender-crisp.
  • Step 4
    Add chicken to saucepan and simmer until chicken is heated through. Add prepared rice to chicken mixture; stir in milk and return to low simmer.
  • Step 5
    In a small bowl, mix flour and cold water until smooth. Gradually stir into soup. Simmer 2-5 minutes or until soup thickens. Remove from heat and serve immediately.
