Ingredients
- 8 cups chicken stock
- 2 ounces dried vermicelli noodles broken into pieces
- 4 ounces shiitake mushrooms sliced
- 7 ounces chicken breasts cut into small pieces
- 1 tablespoon fresh ginger peeled and grated
- 2 tablespoons ketchup
- 4 cloves garlic minced
- 3 tablespoons rice vinegar
- 2 tablespoons soy sauce
- 2 tablespoons sugar
- 2 - red chili pepper seeded and thinly sliced
- 1 teaspoon white pepper
- 3 - green onions chopped. white and dark green parts separate
- 1/2 cup fresh cilantro minced
How To Make chinese hot and sour soup

Step 1Heat the stock in large pan. Add the chicken, mushrooms, and noodles. Simmer until noodles are tender. Add the ginger, garlic, soy sauce, sugar, ketchup, vinegar, chilies, white pepper and the green parts of scallions.

Step 2Cook tasting and adjusting for flavor. Garnish with green parts of scallion and cilantro.
