Ingredients

3 c
chicken broth
8 1/4 oz
cream-style corn
1 c
cooked chicken, diced
1 Tbsp
cornstarch
2 Tbsp
cold water
2
egg whites
2 Tbsp
fresh parsley, minced

Step-By-Step

1Combine chicken broth, corn and chicken pieces in a large saucepan.
2Bring mixture to a boil over medium heat, stirring occasionally.
3Blend cornstarch with cold water and add to soup.
4Continue cooking, uncoverd, for 3 minutes.
5Beat egg whites untill foamy; stir into soup.
6Reduce heat to a simmer and cook until foamy.
7Ladle soup into individual bowls and garnish with parsley.
8Serve hot.
