chicken with ginger, greens & noodles in broth
This is an amazing broth. I make my broth from chicken bones then I use my recipe for clarifing it which I have shared on JAP. The rest of the ingredients are so simple but bring so much flavor. This is my go to dish for lunch

Ingredients
- 2 boneless chicken thighs
- salt and pepper
- 4 cups chicken stock
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 1 tablespoon grated ginger
- 3 cloves garlic minced
- 1 red chili seeded and chopped
- 2 cups baby bok choy chopped
- 1/2 cup cilantro chopped
- 8 ounces rice noodles
- lime wedges for serving
How To Make chicken with ginger, greens & noodles in broth

Step 1Season the chicken with salt and pepper. Get a ridged grill pan very hot and add the chicken. Cook until done. Set aside and let rest 5 minutes then cut into strips Cook the noodles according to package directions. Drain and set aside.

Step 2Place the chicken stock in a pot on stove. Add the ginger and garlic and bring to a boil. Add the red chilies and bok choy. Mix the soy sauce and brown sugar together and add to the stock.

Step 3Place noodles in the bottom of a bowl. Top with cilantro then lay the chicken strips on top. Ladle the broth over all and serve immediately with a squeeze of lime juice
