Ingredients
- 2 tablespoons olive oil
- 1 - yellow onion, diced
- 2 - carrots, chopped
- 1 - red bell pepper, diced
- 3 - plum tomatoes chopped
- 1 - zucchini, cubed
- 4 - garlic cloves, minced
- 8 cups chicken broth
- 15 ounces chickpeas
- 3 cups chicken breasts, cooked and cubed
- 2 teaspoons salt to taste
- 1/2 teaspoon pepper to taste
- 1/2 cup small pasta
- 1/2 pound green beans
- 1 cup green cabbage, chopped
- 2 cups fresh spinach leaves
- 8 - basil leaves
- 3 tablespoons oregano
- 1/2 cup grated parmesan cheese
How To Make chicken vegetable minestrone

Step 1Heat olive oil in a large saucepan over medium heat.

Step 2Add the onion and cook, stirring often, until the onion is translucent.

Step 3Add carrots, bell pepper, tomatoes and zucchini and cook, stirring occasionally until vegetables are soft and lightly browned.

Step 4Add garlic and cook 1 minute longer, be careful not to brown garlic.

Step 5Add broth, chickpeas, chicken, salt and pepper and bring to a boil over medium heat.

Step 6Reduce the heat to low and simmer uncover for at least 1 hour.

Step 7Add pasta, green beans and cabbage, bring a boil and simmer for 10-15 minutes.

Step 8Stirring occasionally.

Step 9Stir in spinach, basil and oregano and simmer for 10-15 minutes, until pasta is done.

Step 10Top with some grated parmesan cheese.

Step 11Serve with crusty bread.
