Ingredients

  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1 tablespoon olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon dried oregano
  • 28 ounces crushed tomato
  • 10 1/2 ounces condensed chicken broth
  • 1 1/4 cups water
  • 1 cup whole kernel corn
  • 1 cup white hominy
  • 4 ounces chopped green chili
  • 15 ounces black beans drained and rinsed
  • 1/4 cup chopped fresh cilantro
  • 2 boneless chicken breast halves cooked and cut into bite size pieces
  • TOPPINGS
  • sliced avocado
  • crushed tortillas
  • shredded cheese
  • chopped green onion

How To Make chicken tortilla soup

  • Step 1
    In a medium stock pot, heat oil over medium heat
  • Step 2
    Saute onion and garlic in oil until soft
  • Step 3
    Stir in chili powder, oregano, tomatoes, broth and water
  • Step 4
    Bring to a boil and simmer for 5-10 minutes
  • Step 5
    Stir in corn, hominy, chiles, beans, cilantro and chicken
  • Step 6
    Simmer for 10 minutes
  • Step 7
    Ladle into bowl
  • Step 8
    Top with your choice of toppings
