Ingredients
- 2 - chicken breasts, cubed
- 1/2 teaspoon olive oil
- 1/2 teaspoon minced garlic
- 1/4 teaspoon ground cumin
- 2 cans chicken broth
- 1 cup frozen corn
- 1 cup chopped onion
- 1/2 teaspoon chili powder
- 1 tablespoon lemon juice
- 1 cup chunky salsa
- 1 can black beans
- 1 can diced tomatoes
- 8 ounces corn tortilla chips
- 1/2 cup shredded monterey jack or pepper jack
- - sour cream
How To Make chicken tortilla soup

Step 1In a large pot over medium heat, sauté chicken. Mix in garlic and cumin. Then add broth, corn, onion, chili powder, lemon juice, salsa, beans and tomatoes. Reduce heat to low and simmer for 20-30 minutes. Serve with tortilla chips, top with shredded cheese and/or sour cream. Optional: add diced green chiles when simmering.
