Chicken Tortilla Soup

After moving from the East Coast to Arizona, I was introduced to this great tasting soup. My children ate the whole pot the first time I made it in a matter of minutes.

chicken broth
1 can(s)
mild green chile's
1 can(s)
diced canned tomatoes
1 can(s)
corn, drained or frozen
1 pkg
mild taco seasoning
1 small
onion, diced
2 Tbsp
1 large
chicken breast (or turkey breast)
cilantro, fresh


1Melt butter in skillet. Add diced onion and cook till softened. Add green chile's, canned tomatoes and taco seasoning. Mix well. Empty skillet into soup pot.
2In same skillet, cook chicken breast in small amount of butter. Cube or shred chicken when cooked. Add to soup pot.
3In large pot add cooked chicken, mixture, broth and corn and cook for 30 minutes on medium low.
4If desired, add cilantro, nacho chips, sour cream, mozzarella cheese or avocado at serving time.
