After moving from the East Coast to Arizona, I was introduced to this great tasting soup. My children ate the whole pot the first time I made it in a matter of minutes.

Ingredients
- 3 cans chicken broth
- 1 can mild green chile's
- 1 can diced canned tomatoes
- 1 can corn, drained or frozen
- 1 package mild taco seasoning
- 1 small onion, diced
- 2 tablespoons butter
- 1 large chicken breast (or turkey breast)
- sprig cilantro, fresh
How To Make chicken tortilla soup

Step 1Melt butter in skillet. Add diced onion and cook till softened. Add green chile's, canned tomatoes and taco seasoning. Mix well. Empty skillet into soup pot.

Step 2In same skillet, cook chicken breast in small amount of butter. Cube or shred chicken when cooked. Add to soup pot.

Step 3In large pot add cooked chicken, mixture, broth and corn and cook for 30 minutes on medium low.

Step 4If desired, add cilantro, nacho chips, sour cream, mozzarella cheese or avocado at serving time.
