chicken stew
This recipe has been passed down from my grandmother, who was a fine southern cook. You can also add a can of diced tomatoes to add more tomato flavor.

Ingredients
- 1 1/2 pounds chicken breasts, boneless and skinless
- 1 large onion diced
- 32 ounces chicken broth
- 46 ounces tomato juice
- 15 ounces can lima beans drained
- 15 ounces can whole kernel corn drained
- 15 ounces can green peas drained
How To Make chicken stew
-
Step 1Place chicken and chopped onion in large pan, cover with chicken broth. Boil until the chicken is done...aproximately 25 minutes. Salt and pepper to taste.
-
Step 2Remove from heat and chop chicken into bite size pieces. Place chicken back into broth along with the remaining ingredients. Simmer on medium heat for about 30 minutes then turn down to low for about an hour.
-
Step 3Serve with crackers or my favorite is to serve with cornbread.
