Ingredients

  • 2 - chicken breasts
  • 15 ounces canned navy beans, drained, rinsed
  • 14 1/2 ounces stewed tomatoes, undrained
  • 3 1/2 cups chicken broth
  • 2 cups carrots, chopped
  • 2 cups cabbage, shredded
  • 1 cup frozen peas
  • 1/2 cup onion, diced
  • 1/2 teaspoon fresh thyme, finely chopped
  • 1/2 teaspoon salt and pepper
  • 1 - bay leaf

How To Make chicken stew

  • Step 1
    Cut chicken breasts in half; salt and pepper. Place in crock pot. Turn on low. Add Navy beans, tomatoes, chicken broth, carrots, cabbage, peas, onion and seasonings. Cover and cook at least 8 hours; or on high for 4 hours.
  • Step 2
    After it has cooked, remove the bay leaf and chicken. Discard the bay leaf and shred the chicken and replace into the stew. Salt and pepper to taste.
