Slow Cooker Crock Pot

Ingredients

  • 2
    chicken breasts
  • 15 oz
    canned navy beans, drained, rinsed
  • 14 1/2 oz
    stewed tomatoes, undrained
  • 3 1/2 c
    chicken broth
  • 2 c
    carrots, chopped
  • 2 c
    cabbage, shredded
  • 1 c
    frozen peas
  • 1/2 c
    onion, diced
  • 1/2 tsp
    fresh thyme, finely chopped
  • 1/2 tsp
    salt and pepper
  • 1
    bay leaf

How to Make Chicken Stew

Step-by-Step

  1. Cut chicken breasts in half; salt and pepper. Place in crock pot. Turn on low. Add Navy beans, tomatoes, chicken broth, carrots, cabbage, peas, onion and seasonings. Cover and cook at least 8 hours; or on high for 4 hours.
  2. After it has cooked, remove the bay leaf and chicken. Discard the bay leaf and shred the chicken and replace into the stew. Salt and pepper to taste.
